What do you do when you only have eggs, 1 onion, frozen peas and a bag of dry brown rice?
You make fried rice!
I didn't have frozen carrots or green onions and mine was great. If you're like me, you'll MacGyver through it.
INGREDIENTS
3 cups cooked rice
1 Tbs olive oil
2 Tbs sesame oil
1 small white onion, chopped
1 cup frozen peas and carrots, thawed
2-3 Tablespoons soy sauce (to taste)
2 eggs, lightly beaten
2 Tbsp chopped green onions
Directions
If you start with dry rice like I did get a large skillet out and heat 1 tablespoon of olive oil, over medium heat. Roast the rice just until it starts to slightly brown. Turn off heat and add the rice to a rice cooker. I used 1 cup of dry rice and it made plenty for this recipe.
Heat the same large skillet back to medium heat. Pour sesame oil in the bottom. Add white onion and peas and carrots and fry until tender.
Slide the onion, peas and carrots to the side, and pour the beaten eggs onto the other side. Using a spatula, scramble the eggs. Once cooked, mix the eggs with the vegetable mix.
Add the rice to the veggie and egg mixture. Pour the soy sauce on top. Stir and fry the rice and veggie mixture until heated through and combined.
Add chopped green onions if desired.
A few notes:
If you don't own a rice cooker get one! This is the only way to make decent rice. Plus you can also make quinoa and even steam veggies and fish in it! Here's the one I love.
